- 7 oz. (200g) coconut sugar
- 1 tsp. vanilla extract
- 11.25 oz. (320g) self-raising flour
- zest of 1 large orange
Instructions
- Preheat the oven to 200°C (390°F). Line two large baking trays with parchment paper.
- In a small bowl, mix the ground flax seeds with 1 tbsp cold water. Let sit for 5 minutes to thicken—this will be your flax "egg."
- In a large mixing bowl, cream together the margarine, coconut sugar, and vanilla extract until smooth. Add the flax egg and stir to combine.
- Add the self-raising flour and mix until a dough starts to form. Add the orange zest and knead gently with your hands until evenly incorporated.
- Divide the dough into 12 equal portions. Roll each into a ball, flatten slightly, and place on the prepared trays, leaving some space between them.
- Bake for 12 minutes, or until the edges are lightly golden. Remove from the oven and let cool on the tray for a few minutes before transferring to a wire rack to cool completely.
