- 1 tbsp. ground flax seeds
- 7 oz. (200g) vegan margarine
- 7 oz. (200g) coconut sugar
- 1 tsp. vanilla extract
- 11.25 oz. (320g) self-raising flour
- zest of 1 large orange
Preheat the oven to 200°C (390°F). Line two large baking trays with parchment paper.
In a small bowl, mix the ground flax seeds with 1 tbsp cold water. Let sit for 5 minutes to thicken—this will be your flax "egg."
In a large mixing bowl, cream together the margarine, coconut sugar, and vanilla extract until smooth. Add the flax egg and stir to combine.
Add the self-raising flour and mix until a dough starts to form. Add the orange zest and knead gently with your hands until evenly incorporated.
Divide the dough into 12 equal portions. Roll each into a ball, flatten slightly, and place on the prepared trays, leaving some space between them.
Bake for 12 minutes, or until the edges are lightly golden. Remove from the oven and let cool on the tray for a few minutes before transferring to a wire rack to cool completely.
