This bowl does exactly that.
The quinoa and lentils create a hearty base packed with plant-based protein and fiber, making the meal both filling and nourishing. Fresh cucumber, juicy cherry tomatoes, parsley, mint, and green onion bring color and freshness, creating a salad that feels light while still being substantial.

Then comes the star of the recipe.
The tofu marinates in lemon juice, lemon zest, garlic, thyme, and capers before being baked until beautifully golden around the edges. The result is tofu that is bright, savory, and wonderfully flavorful, with crispy corners and a tender center that pairs perfectly with the fresh salad below.
Every ingredient has a purpose.
Nothing feels unnecessary.
Everything works together to create a meal that feels balanced, refreshing, and deeply satisfying.
It is also one of those recipes that makes healthy eating easier throughout the week.
