  • zest & juice of 1 lemon
  • 4 tbsp. pesto
  • 1 oz. (30g) rocket

Instructions
 

  • In a bowl, combine the butter beans with lemon zest, a squeeze of lemon juice, a drizzle of 1 tbsp olive oil, pinch of salt, and black pepper. Mix gently to coat.
