Almond & Berry Breakfast Bake
Ingredients
- 5.3 oz. (150g) rolled oats
- 1 pt. (450ml) boiling water
- 2 tsp. vanilla extract
- 7.6 fl oz. (225ml) unsweetened almond milk (plus extra to serve, optional)
- 1 large ripe banana, peeled
- 6.5 oz. (185g) frozen mixed berries
- 1-2 tbsp. toasted flaked almonds
- 1 tsp. maple syrup (optional)
Instructions
- Preheat the oven to 375°F (190°C).
- In a heatproof bowl, combine the rolled oats with the boiling water, vanilla extract and almond milk.
- Mash the banana and spread it over the base of a medium sized baking dish.
- Stir in frozen berries and maple syrup (if using).
- Pour the oat mixture over the fruit and sprinkle over the toasted flaked almonds.
- Place the dish into the hot oven and bake for 30-40 minutes until set and the fruit juices are bubbling around the edges.
- Serve the baked oats with a splash of extra almond milk if desired.
