Dry Ingredients:
- 6.4 oz. (180g) all-purpose flour
- 1.4 oz. (45g) vanilla whey protein powder
- 1 tsp. baking soda
- 2.6 oz.
(75g) fresh blueberries
Wet Ingredients:
- 3.5 oz. (100g) coconut sugar, packed
- 4 tbsp. maple syrup
- 5.3 oz. (150g) mashed blueberries
- 2 large eggs
- 4.2 fl oz. (125ml) unsweetened almond milk
- 2 tbsp. coconut oil, melted
Preheat the oven to 350°F (180°C) and spray a donut pan with cooking spray.
In a medium bowl, whisk together all dry ingredients.
In a large bowl, whisk coconut sugar and maple syrup. Add mashed blueberries, eggs, and almond milk. Stir until well combined.
Fold the dry ingredients into the wet mixture. Add melted coconut oil and stir again until fully incorporated.
Fill each donut mold generously. Bake for 8-10 minutes, or until a toothpick inserted comes out clean.
Remove from the oven and let cool for a few minutes before transferring to a wire rack.
Do not leave in the pan too long, as they will continue to bake and may become dry.
Store in an airtight container in a cool, dry place.
