Ingredients
  

Dry Ingredients:

  • 6.4 oz. (180g) all-purpose flour
  • 1.4 oz. (45g) vanilla whey protein powder
  • 1 tsp. baking soda
  • 2.6 oz.

    (75g) fresh blueberries


Wet Ingredients:

  • 3.5 oz. (100g) coconut sugar, packed
  • 4 tbsp. maple syrup
  • 5.3 oz. (150g) mashed blueberries
  • 2 large eggs
  • 4.2 fl oz. (125ml) unsweetened almond milk
  • 2 tbsp. coconut oil, melted

Instructions
 

  • Preheat the oven to 350°F (180°C) and spray a donut pan with cooking spray.
  • In a medium bowl, whisk together all dry ingredients.
  • In a large bowl, whisk coconut sugar and maple syrup. Add mashed blueberries, eggs, and almond milk. Stir until well combined.
  • Fold the dry ingredients into the wet mixture. Add melted coconut oil and stir again until fully incorporated.
  • Fill each donut mold generously. Bake for 8-10 minutes, or until a toothpick inserted comes out clean.
  • Remove from the oven and let cool for a few minutes before transferring to a wire rack.
  • Do not leave in the pan too long, as they will continue to bake and may become dry.
  • Store in an airtight container in a cool, dry place.
